"Cocoa mass" is the industry term for finely ground cocoa material — the whole roasted cocoa bean, ground so finely that the natural cocoa butter melts and the mixture becomes a dark, flowing liquid at process temperature.
Three industry names for the same material: 100% ground cocoa bean, containing both cocoa solids and cocoa butter. The name "cocoa liquor" is an old chocolate-making term and has nothing to do with alcohol.
Where it belongs
Cocoa mass is the foundation of real chocolate. It is also used in professional pastry and in concentrated drinking chocolate.
