LA COCO offers pure cocoa ingredients. Final product specifications will confirm which products contain no added sugar; nothing is sweetened without being clearly labelled.
Natural powder keeps its natural acidity and tends toward a lighter colour with a sharper cocoa character. Alkalized powder is treated to reduce acidity, giving a darker colour and a rounder profile. Neither is healthier or superior — each suits different applications.
No. Cocoa liquor — also called cocoa mass — is ground roasted cocoa that stays fluid at room temperature. It contains no alcohol; the industry name is misleading.
Pressed cocoa cake is the dense cocoa material remaining after part of the cocoa butter is separated. It can be used as an ingredient or milled into cocoa powder. It is not a dessert cake.
No. Cocoa butter is the naturally occurring fat of the cocoa bean. It contains no dairy and is used in chocolate, confectionery, baking and other food applications.
Using cocoa
It depends on the recipe. Natural powder is often used in recipes that rely on its acidity; alkalized powder is common where a darker colour and rounder cocoa flavour are wanted. Follow the recipe's guidance.
