Cocoa mass (cocoa liquor) for deeper cocoa intensity and chocolate making. Cocoa butter for texture, mouthfeel and fat composition.
Powder, cocoa mass and cocoa butter are not interchangeable — final choice depends on the recipe and on the product's specification.
