What is cocoa butter?

Cocoa butter is the naturally occurring fat of the cocoa bean. It contains no dairy.

Roughly half the weight of a cocoa bean is fat — cocoa butter. It is pressed out of ground roasted cocoa and sold as shards, blocks or discs. Despite the name, cocoa butter is a cocoa-derived fat and contains no dairy.

Natural vs. deodorized

Natural cocoa butter carries a soft cocoa aroma. Deodorized cocoa butter is steam-treated during processing to remove aroma, giving chocolatiers and food producers a more neutral base.

Where it belongs

Cocoa butter is used in chocolate, confectionery and other food applications where a cocoa-based fat is required.
