A simple cup of pure cocoa: warm milk, natural cocoa powder, a little sweetness.
Cocoa powder mixes best when bloomed first in a small amount of warm liquid. From there, add the rest of the milk, sweeten to taste, and serve.

Method

Place the cocoa powder in a small cup or jug.

Warm the milk gently in a small pot — do not boil.

Whisk a splash of the warm milk into the cocoa until you have a smooth paste.

Add the remaining milk gradually, whisking as you pour.

Sweeten and season to taste. Serve warm.

- — A pinch of salt sharpens the cocoa flavour.
- — Try oat milk for a rounder cup.
