A thick drinking chocolate built on pure cocoa mass and milk.
Cocoa mass (also called cocoa liquor) is 100% ground cocoa — cocoa solids together with the naturally occurring cocoa butter. Despite the industry term "liquor," it contains no alcohol.

Method
- 01
Warm the milk gently in a small pot until steaming — do not boil.

Add the chopped cocoa mass. Whisk continuously until it has fully melted into the milk.

Sweeten to taste and add a pinch of salt.

Pour into small cups — this is a rich, concentrated drink.
Notes
- — Add a spoon of alkalized cocoa powder alongside for extra body.

Serve fresh.
